
Nutrition Fundamentals provides an in-depth exploration of the principles and concepts underlying human nutrition. The course covers essential topics such as macronutrients (carbohydrates, proteins, and fats), micronutrients (vitamins and minerals), energy metabolism, dietary guidelines, and the role of nutrition in overall health and disease prevention. Through lectures, discussions, and practical assignments, students will gain a comprehensive understanding of the relationship between diet, physical activity and health, nutritional needs across the lifespan, and the influence of socio-cultural factors on food choices. Emphasis is placed on evidence-based recommendations and critical evaluation of nutritional information. Students will gain the knowledge and skills necessary to make informed dietary choices and promote optimal health outcomes for themselves and others. Prerequisite: ESK-106.
